Rhubarb jam...
4 cups diced rhubarb
3 cups sugar
sprinkle of water
3 oz. package of strawberry gelatin
Combine rhubarb, sugar and a little water(to keep from sticking). Bring to a boil and boil for 10 minutes. Add gelatin and remove from heat. Stir and put in jars. I use plastic Tupperware and freeze.

Thanks for sharing the recipe. I don't have any rhubarb, but our neighbor does and we're welcome to it every year. This sounds like an easy enough recipe for me!

Our Rhubarb has gone to seed but it can still be had through the Farmers Market. I myself don't eat Rhubarb..... Never got a taste for it no matter what was done to it!!

Oh my heavens, my great aunt used to make this for me every summer. She has passed on, but I am trying to grow my own rhubarb. I have one plant surviving so far.
